1. JOB DESCRIPTION
1.1 JOB TITLE Catering Supervisor - Siblyback
1.2 LOCATION Siblyback Lake nr Liskeard, Cornwall
1.3 SALARY: £7.70 per hour
1.4 DURATION: Until October 2016
1.5 HOURS: Up to 40 hours per week (including weekends and Bank Holidays)
1.6 RESPONSIBLE TO: Catering and Hospitality Manager
2. OVERALL PURPOSE
2.1 To manage, organise and run efficiently a profitable catering establishment and gift outlet at one of South West Lakes Trust’s key tourist destinations. To maintain standards and hygiene to a degree of excellence, producing and serving food and drinks to a high standard and the retailing of gifts. Maximising sales and cross promotion at every opportunity.
3. KEY TASKS AND RESPONSIBILITIES
3.1 To run an efficient and profitable catering establishment and gift outlet on a day to day basis, ensuring staff cover as required throughout the season.
3.2 Supervise staff and ensure they are working to required standards.
3.3 Cook, present and serve quality food and drinks to a high standard, whilst keeping good recognised safety and hygiene standards and following relevant health, safety and security procedures.
3.4 Service and cater for any conference or functions on site
3.5 Order catering supplies from approved suppliers.
3.6 Ensuring that portion control and wastage are closely controlled in line with agreed standards.
3.7 Maximise sale through up-selling and actively promoting goods to customers, ensuring food displays are well stocked maintained and displayed to a high standard.
3.8 Work closely with the Assistant Supervisor to maintain high standards of customer service.
3.9 Oversee the maintenance and cleaning, to the highest standards, of all equipment.
3.10 As a key holder take responsibility for security of the premises.
3.11 Maintain high standards of cleanliness in all areas of the café.
3.12 Handle money in accordance with Trust procedures and maintain shop records.
3.13 Ensure weekly/monthly paperwork, timesheets and records are completed and returned to Head Office according to procedures.
3.14 Monthly stock takes to be completed in a timely manner and a high level of accuracy.
3.15 Promotion of the all the Trusts activities, including the Friends of the Trust scheme and assisting with maximising car parking income. Dealing effectively with enquiries from the general public.
3.16 Work closely with Centre Manager and site staff in other disciplines to cross promote activities.
3.17 Undertake training and development as required by the Trust
3.18 Be accountable to the Trust for the Health and Safety of the customers, yourself and your colleagues. Keep up to date records of accidents and review risk assessments on a regular basis.
3.19 Perform such other duties as may be assigned by the Trust.
4. EXPERIENCE REQUIRED:
4.1 Proven experience in food preparation and cooking.
4.2 Experience in supervising staff.
4.3 Previous experience of dealing with suppliers, ordering stock and stocktaking
4.4 Experience of retail.
4.5 Smart personal appearance and professional image.
4.6 Enthusiasm and ability to work under own direction
4.7 Good customer service skills
QUALIFICATIONS AND EXPERIENCE REQUIRED:
4.8 Qualification to a minimum of Level II Food Hygiene or similar.
4.9 Intermediate Food Hygiene (Level III) qualification or equivalent
4.10 Health and Safety industry recognised qualification
